The ramen flavors were unusual and interesting. Beef bone broth was tasty but kind of one note. Egg was great. But Edamame and truffle don’t really play well. Stay away from the arugula salad. That didn’t have salt at all and the texture was bad.

Overall, good local Ramen restaurant.... I didn't understand if it was the architecture concept or the place just old and not that clean l. I order the Kinpira (Spicy sauteed burdock and carrots / Lotus roots, chili ) its basically like sushi but with lots of 🍚 rice. The Ramen was actually good... loved the Noodles 🍜, its a big portion I would come there again

Really good bone broth. I wasn't flattered with the noodles or short rib. Noodles were undercooked, rib was overcooked. If you're looking for a general ramen spot, nothing to deter you away but there are so many ramen options in NYC, it's not a must visit.

The place is super dark, too intimate a vibe for a bowl of ramen IMO 😆BUT, the gyukotsu is SO delicious I can’t stop coming back…. Seriously I’m a ramen snob and this might be the best bowl I’ve ever had!!

The noodles are fried thin noodles like Kyushu ramen. The soup also looks cloudy like Kyushu Tonkotsu ramen, but it was Gyukotsu (beef bone broth) not Tonkotsu (pork bone broth), which made the ramen cleaner and tasty. If you know Japanese Gyukotsu ramen like clear consommé soup, their ramen is completely different and worth a try. I would definitely like to come back again. ------------------- I came back, and the Gyutan Ramen was amazing. The soup was bold and creamy as i expected, and the Gyutan (beef tongue) was chewy and delicious.

Some of the most amazing ramen in NYC! The beef broth makes all the difference for wonderful flavor. The rich, fiery, and almost creamy broth for the Tan Tan ramen is so amazing. Stop in once and you’ll get addicted. Truly delicious ramen.

I have to say I would probably never come in to this ramen store had my Japanese friend not recommend it. The chef is not Japanese and the interior is pretty dated, also not many people in this location so what else can go wrong right? But to my surprise, their ramen is decentLy good. Soup is light but flavorful, chashu is charred and smoky and noodle is fresh and good. Their karaage and unagi pie are also really good. If you are around the neighborhood, please give this store a try.

I want to place this as #3 on my “Best Ramen in NYC” list. 1st is Cha Menya and 2nd is Ramen Ishida. Za-Ya Gyutotsu - $18 + $2 (egg add on) Broth - 5/5. BEEF BONE MARROW BROTH. In love with it. A different type of fattiness! Cha shu - 3/5. This is BEEF, not pork. Has the charred and smokiness, tender but chewy. Probably the lowest component of the three. Noodles - 5/5. 17 minutes of thin noodles sitting in the broth, but maintain its firmness. I’m beginning to fully appreciate and embrace thin noodles now. Side notes: Unagi Pie - $10. Flaky and puffy. Sweet eel sauce glaze. Texture of the pastry overpowers the eel. Karaage - $10. Same as mines but crunchier. They definitely added a lot of seven spice to the mayo, which is a plus. Total - $52.26
